In Wyoming, the vast majority (I’m guessing here, but I’m a very confident guesser in this case) consume wild game meat. It’s just part of the lifestyle. And those too afraid to throw it into the mix? They’re missing out on some delicious & nutritious goodness. My personal fav is Elk. Here is an easy go-to perfect for the cooler weather and the current hunting season.
1 yellow onion (diced)
3 cloves garlic (diced)
3 tbs EVOO
1 lb ground elk burger
3 lbs red potatoes (diced)
1 lb carrtos (diced)
1 bunch kale (trimmed of stems and diced)
Fresh black peper
2 quarts Vegetable Broth (Commercial or Homemade)
In a large soup pot add olive oil over medium heat. Stir in onions and garlic, sautéing until translucent (about 3 minutes). Add elk burger to brown.
When burger is cooked, add broth, diced potatoes, and carrots. Simmer covered on low heat for at least 1 hour.
Add in diced kale (do not include stems). Cover and continue to simmer for about 20 minutes.
Salt and Pepper to taste and serve
